Abstract :In this article, the changes of phosphorus, sodium, potassium, calcium and nitrogen con- tents of three cabbage cultivars in relation with cold acclimation and hardiness have been examined. The effect of cold ou three sgricultural forms of white bead cahbage was investîgated in different deveîopment stages. For this purpose, they were planted in different seasons and samp- led during seedlîng and headed phases. While three cultivars planled in Jnne froze, those planted in October did not, but chilled onIy. The inereases of mineral salt levels during cold acclimation and hardiness have been accepted as related with this fact. Significant changes have generally been obtained from the headed stages of cultivars, especially that of phosphorus was observed in ali cultivars. Sodium and potassium levels changed considerably in Bayraklı; total nitrogen, sodium and potassium in Samsun top cultivar and calcium in Yeşilköy cultivar. The lesults of preseni study can be considered as indicators of some practical approaches. such as fertilizing, spraying and choosing varieTes of cabbages fer improvement and partly for ali erop plants.Keywords : RELATION OF COLD, HARDINESS, BIOCHEMICAL FLUCTUATIONS
