Abstract :In this study the drying characteristics of potato which is grown Niğde region for different air temperature and pre-treatments were determined. In the trials, air temperatures as 60 0C, 70 0C, 80 0C and air velocities as 2.0 m/s were taken. Potato samples that cut at dimensions 20x10x4 mm, 12.5x12.5x12.5 mm and 25x12.5x12.5 were dried.. In the trials result, drying coefficient (k) values for samples of potato were found 1,959…3.691 (20x10x4 mm); 0,791…1.232 (12.5x12.5x12.5 mm); 0,573…0,854 (25x12.5x12.5 mm) respectively.Keywords : Patates, hava sıcaklığı, hava hızı, ön işlem, kuruma hızı, kuruma sabiti
