Determination of Drying Characteristics of Dried Okra at Controlled Conditions

Abstract :In this study, the drying characteristics of okra were determined at the different air temperatures and air velocity. In the experiments, air temperatures and air velocities as parameters were used at 40 oC, 50 oC, 60 oC, 70 oC and 1 m/s, 2 m/s, respectively. The data obtained were evaluated with STATISTICA statistical program. Increasing of air temperature and air velocity was caused to increase of drying velocity on okra. As a result of Newton Model, Root Mean Square Error (RMSE) values between 0.011318 and 0.025491, chi square values (X2) between 0.000131 and 0.000109, and the modeling efficiency (EF) values between 0.998841 and 0.989590 were determined. Also in the Page Model, RMSE, X2 and EF values changed between 0.002414 and 0.012642, 0.000005 and 0.000183, and 0.998127 and 0.999929, respectively.Keywords : Bamya, hava sıcaklığı, hava hızı, kuruma hızı, kuruma sabiti
