Abstract :Nitrate and nitrite contents in total 60 White cheese samples purchased from markets in Konya between 1994-2000 years were determined. The nitrate and nitrite contents of cheese samples respectively changed from 4.66 and 0.00, to 37.00 and 2.40 mg/kg. All samples had nitrate and nitrite levels inside the legal limits (according to Regulation Turkish Food Codex). The quantity of nitrate and nitrite in White cheese samples not carries potential risk for the health of humans.Keywords : Nitrat, nitrit, Beyaz peynir.
